Mozzarella & Arugula Stuffed Portobello Mushrooms

A great low carb meal that I love to make is stuffed mushrooms. They are so versatile. You can stuff them with cheese, meat, veggies. Anything your heart desires. The stuffed Portobello mushrooms I use as the main item in a meal. I usually eat these with a salad or another veggie on the side.

You can really stuff mushrooms with anything. These have fresh mozzarella and arugula. I finished with fresh chopped tomatoes.

Fresh Mozzarella & Arugula Stuffed Portobello Mushrooms

6 large Portobello mushroom, stems removed, cleaned
12 oz fresh mozzarella, diced
12 oz fresh arugula
3 garlic cloves, minced
3 large Roma tomatoes, diced
1 T fresh basil (1/2 T dried basil)
2 T olive Oil
2 t salt
2 t pepper

Directions: Preheat Oven 400°. Place mushrooms on a baking sheet. Add in 2 oz of mozzarella to each mushroom and 1 oz of fresh arugula and add a few pieces of minced garlic. Sprinkle with salt and pepper. Use more or less of the cheese and arugula if you would like. Drizzle olive oil over the top of mushrooms. Bake in the oven for 20-25 minutes depending on the size. Remove from the oven when the mushrooms are tender and the cheese is fully melted. Top with the diced tomatoes and basil and a pinch of salt and serve hot.

Note: These are perfect with any ingredients. Use goat cheese, or cream cheese and panko bread crumbs. Stuff with Italian sausage. Or even feta and spinach. Cook times may vary depending on size of mushrooms and ovens.

Easy Corn Casserole

I love this corn casserole.  I know there is plenty of recipes out there for this, but I had to share.  I just made again recently and I haven’t made in a while. I forgot how much I liked it.  It definitely isn’t the healthiest thing, but that’s ok. It’s good to treat yourself every so often.

I don’t personally add cheese to mine, I like it as more of a sweeter dish.  If you want to add some cheddar cheese, you can.  Give it a try!

Corn Casserole

Ingredients:

1 box Jiffy Corn muffin Mix
1 15.25 oz can of corn
1 14.75 oz creamed corn
2 eggs, beaten
1 stick butter, melted
1 cup sour cream

Directions: Preheat oven 350.  In a bowl add in the box of Jiffy, cans of corn, eggs 1 cup of sour cream and melted butter.  Mix till fully incorporated.

Spray a 10 inch pie pan with cooking spray.  Add in the corn mixture and bake in the oven for 45-50 minutes.  Let set at least 5 minutes before eating.

Note: This can be made a day in advanced and just bake when ready to make it.  It reheats very well.  I serve on the nights I make tacos or enchiladas, but any day is a good day.

Seared Scallops with Cheesy Rice

I love a good scallop.  They are very easy to make and can be cooked to perfection in minutes.  I always feel like no matter what you make with scallops the dish automatically looks fancier.  Maybe that’s just me, lol!

This dish I put together rather quickly.  Don’t judge, this dish was made with minute rice. Yes, minute rice.  I know. I should just make regular rice, but it’s what I had on had and it’s always good to be able to take something you have on hand and make a delicious dish.  Especially with this pandemic going on right now, we need to use what we can find and what we have.

Regardless, this dish is still delicious and probably one of my favorite scallops dishes.  Can’t ask for anything easier.

Seared Scallops with Cheesy Rice

Ingredients:
12 Sea scallops, rinsed
2 cups rice, cooked (under cook by a few minutes)
1/4 cup and 2 T heavy cream
1/4 cup grated Romano or Parmesan cheese
3 cloves garlic, grated
2 t garlic powder
2 t onion powder
2 t salt (more to taste)
2 t pepper (more to taste)
3 T olive oil

Directions: Add cooked rice to a small soup pot.  Add in the heavy cream, garlic and cheese and seasoning and mix well.  Cook on low heat 5-6 minutes.

Heat a medium sauté pan on high heat.  Completely try the scallops so they can form a nice crust.  Season the scallops with salt and pepper on both sides. Once the pan is hot add in the oil and let heat 2-3 minutes.  You want the pan to be very hot so you can get a nice sear on the scallops.

Add the scallops to the pan and cook 3 minutes and then flip and cook another 2-3 minutes.  Once done, remove from pan and serve immediately.  I served over the cheesy rice.  Yum!

Cauliflower Rice Shrimp Bowl

I love having a simple go to meal that you can truly make in no time.  After long days working or as of late with this virus, so many parents are at home home schooling kids and working and just trying to keep their sanity.

Having a easy healthy meal is important.  This dish can literally be put together in less than 15 minutes.  This is a perfect meal for a meal prep. Easy to make and full of nutrients and flavor.  Take a look.

Cauliflower Rice Shrimp Bowl

Ingredients:

12-14 shrimp, cleaned and deveined
2-3 cups cauliflower rice (fresh or frozen)
2 T olive oil
2 garlic cloves, minced
1/2 large red pepper, diced
1/2 large yellow pepper, diced
1/2 large onion, diced
2 t chili powder
1/2 T garlic powder
1/2 T onion powder
3 t salt
3 t pepper

Directions: Heat a medium saute pan on high heat.  Rinse shrimp and lay out on paper towel and pat dry. (This will help get a nice golden exterior) Season the shrimp with with 2 t chili powder, 1 t onion powder, 1 t of garlic powder, 1 t of salt and 1 t of pepper.  Mix with hands to coat. Set aside.  Heat 1 T of olive oil in pan. Let heat 2-3 minutes.  Add in the shrimp and cook. Cook 2-3 minutes and flip.  (Note: Cook time depends on the temperature of pan and how many shrimp you have in it)

The shrimp are cooked when they are pink and the flesh is slightly opaque. Once cooked, set aside.

Add remaining olive oil to that same pan.  Let heat 2-3 minutes.  Add in garlic, diced peppers and onions and cook 2-3 minutes until slightly tender.  Add in the cauliflower rice and cook another 3-4 minutes. (Cook 7-8 minutes if using fresh vs frozen cauliflower rice) Season with remaining seasoning.

Once rice is finished add to a bowl and top with shrimp. Serve and enjoy!

Note: This can easily be made with any veggies you have on hand.  If you’d rather use 2 pans to make this dish, you would need to make at the same time. I just try to make it simple and have easy clean up.

Healthy Salmon Veggie Bowl

Ever since I started to eat salmon a year ago, I’ve been really experimenting with what different dishes. This was one of my favorite meals so far.

This dish is filled with so many good nutrients, protein and lots of veggies. You can modify it with any vegetables that you have on hand or that you like.

Healthy Salmon Veggie Bowl
(2 Servings)

Ingredients:

Salmon:
2 Alaskan Salmon pieces, with skin on
1/2 lemon
1 T butter
2 t garlic powder
2 t onion powder
1 t paprika

Roasted Pepper & Sweet Potato
1 large red pepper, sliced
1 large sweet potato, diced
1 T olive oil
2 t chili powder
2 t garlic powder
2 t onion powder
2 t salt
2 t pepper

Cauliflower “Fried” Rice
2 cups cauliflower rice ( I buy already riced or frozen)
2 T frozen peas
2 T frozen Corn
1/2 small onion, diced
1/2 T olive oil
2 t garlic powder
2 t onion powder
2 t soy sauce

Toppings:
1 Green Onion, sliced

Directions: Preheat oven 375°. Add sliced red pepper and diced sweet potato to a oven safe dish in a flat layer. Keep separate. Drizzle with olive oil and season with spices above. Mix well to coat. In a second oven safe dish add in the salmon pieces. Season the fish with above seasonings, drizzle with some lemon juice and add half tablespoon of butter to the top of the pieces of fish. Add both pans to the oven and cook 30-35 minutes. Half way through flip the sweet potatoes and peppers.

While the veggies and salmon are cooking, next we start the cauliflower “fried” rice. Heat a medium saute pan on medium high heat. After the pan heats up add in the olive oil and let heat 2 minutes. Add in the diced onion and cook for 3 minutes. Next add in the peas and corn and cook 3 minutes. Add in the cauliflower rice, seasoning and soy sauce and cook 10-12 minutes stirring often. Cook until your preferred tenderness.

Cook the salmon until the internal temperature reads 145°. Once done, remove from oven and squeeze some lemon over the top.

To assemble the bowl add in the cauliflower “fried” rice, a piece of salmon, some sweet potatoes and red peppers and top with sliced green onions. Serve immediately and enjoy!

Notes: You can use any veggies you have on hand, zucchini, corn, potatoes, broccoli, the list goes on and on. If you prefer the salmon a little under, cook to your desired temperature. Me, I need mine completely done. The seasonings are to taste, if you want more salt, add it if you want no salt omit it. This will also work well with other proteins. Chicken breast, pork tenderloin, other fish or even shrimp.

Buttery Garlic Portobello Mushrooms

I love mushrooms! They are so veresitle. You can stuff them, turn them into burgers, sauté them, fry them and pretty much anything else you can think of.

Funny story, I didn’t always like mushrooms. I would steer clear of them as much as possible. Then probably like 12 years ago I was having dinner at my then boyfriends house with his parents. His Mom asked if I liked mushrooms and my boyfriend chimed in and said “No, she hates them!” Knowing good and well that his mother just made mushrooms as part of dinner. I think my mouth fell to the floor. I couldn’t believe he called me out like that. I ended you putting some mushrooms on my plate because that’s just good manners. Much to my surprise I didn’t hate them.

After years of eating mushrooms now, I’ve been able to develop some amazing recipes. That’s where this recipe comes in. I almost wasn’t going to post because it is so simple. But I decided too because if you like mushrooms you’ll love this recipe. It’s very simple. Maybe a little more time consuming because it does take time to get to the golden mushroom we are looking for with this recipe since there is so much water in mushrooms. The mushrooms need to be cooked until the liquid is completely gone which may take some time. Trust me it’s worth it! Check it out and I hope you enjoy it!

Buttery Garlic Portobello Mushrooms

Ingredients:
16oz sliced Portobello mushrooms
4 garlic cloves, minced
1 T olive oil
3 T butter
2 t garlic powder
2 t onion powder
2 t dried parsley
salt, to taste
pepper, to taste

Directions: Heat a large sauté pan on high heat. Add in olive oil and let heat 1-2 minutes. Add in garlic and cook 2 minutes mixing constantly. Don’t let the garlic brown.

Next add in the mushrooms and cook several minutes. In order to get a golden mushroom you need to cook the mushrooms to the point where the liquid is completely gone. This will take a while. Probably about 15-20 minutes. You will need to stir every couple minutes.

Once the liquid finally starts to evaporate you will need to cook another 7 minutes or so to get the golden brown color on the mushrooms. Once the mushrooms start to get golden add the butter and mix a few times as the butter melts. Season the mushrooms with garlic and onion powder and parsley and season with salt and pepper. Serve hot.

Cook Notes: You can definitely use white button mushrooms as well in this dish. Feel free to try some different spices in this recipe.
