Viral Baked Feta & Tomato Chicken Verison

Hello!!!!!!!!!!!!!!!!!!!! Have you missed me?? I’m so sorry I’ve been so MIA. My focus is on my new job and I’ve been beyond busy haven’t really spent to much time cooking up new recipes, unfortunately. I have made a few but not as many as I’d like.

I decided to give this viral baked feta and tomatoes recipe a try! I mean it’a all over, I had to! I’m watching the carbs so decided to do a chicken version of this viral recipe. O.M.G. It came out delicious. Full of flavor. You can easily do this with chicken breast which I’ll probably use next time. I made with chicken thighs.

You need to make sure to try this dish! It’s so yummy and you don’t even miss the pasta… well maybe a little.

Baked Feta & Tomato Chicken

Ingredients:
8 chicken thighs, boneless & skinless
1 8oz block feta cheese
3 garlic cloves minced or grated
1-1 1/2 cup grape tomatoes
3 T extra virgin olive oil (Use the good stuff here)
1/2 T Italian seasoning
2 t pepper
2 T fresh basil

Directions: Preheat oven 400°. In a medium size baking dish add in the tomatoes. Make a whole in the middle and add in the block of feta cheese. Drizzle the extra virgin over the tomatoes and completely cover the top of the feta cheese. Season the tomatoes and feta with Italian seasoning and pepper and mix tomatoes to fully coat. Place in the oven for 20 minutes until the tomatoes are blistered.

Remove pan from the oven and smash the feta cheese and mix in with the tomatoes. Add in the garlic and mix well. Spoon the feta mixture over the chicken thighs and return to the oven at 375°and bake for 20-25 minutes until the chicken is fully cooked. Internal temperature needs to reach 165°.

Remove chicken from oven let rest for a few minutes and then top with basil and serve. This dish would be great served with a vegetable side, over rice or mashed potatoes.


Egg Roll Bowl

This dish seems to be all the rage right now. It’s a healthier low carb option to an egg roll! You can really mix this up with any ingredients you like. It’s a great dish for a weeknight because it can be put together very quick! I’ve been asked to make it and post my recipe, so here it is. I personally don’t think it’s fantastic, but it’s a good healthier meal for a weeknight! Give it a try and you be the judge!

Egg Roll Bowl

Ingredients:
1 lb ground turkey/pork/chicken
16 oz bag- tri color coleslaw
1T olive oil
2 garlic cloves, minced
1 small onion, diced
1 red pepper, diced
2 T light soy sauce
2 T Hoisin sauce
1 t salt
1 t pepper
1 t chili powder
1/2 cup water chestnuts, optional

Optional Toppings:
green onions
sriracha
avocado
sesame seeds

Directions: Heat a medium sauté pan on medium high heat. Add in the ground meat and brown the meat until fully cooked, breaking up into small pieces. Once the meat is cooked, take out and set aside. Add in the olive oil to the pan and let heat 2 minutes. Next add in the garlic, onion, and red pepper and let cook about 3-4 minutes, until slightly tender. Then add in the coleslaw and mix well. Cook until the coleslaw starts to soften. (Note: watch that it doesn’t get to soft or it will become mushy.) Cook about 7-8 minutes, mixing often. Reduce or add time depending on how fast the coleslaw is cooking. Return the meat to the pan. Lower the heat to low and add in the soy sauce and hoisin sauce, mix well. Season the mixture with salt, pepper and chili powder. If using the water chestnuts add those in and mix. Cook on low for 5 minutes until everything is heated through. To serve, add to a bowl top with green onions, siracha and avocado or any toppings of your choice and enjoy!

Cheesy Cauiflower Casserole

This cheesy cauliflower casserole is great for any side dish. Perfect for a holiday, party, or even just a regular week night! This recipe is actually made low carb. Really the only item that I used differently for a low carb option, was I used xanthan gum and almond vs white flour. You can easily omit that and use flour. Give this recipe a try! If you don’t love cauliflower, try making this…it will change your mind!

Cheesy Cauliflower Casserole

Ingredients:
2 lbs fresh cauliflower, cut in bite sizes pieces (or smaller, depending on preference)
1 stick butter, melted
1 small onion, diced
2 garlic cloves, minced
6 slices cooked bacon or 4 slices prosciutto crispy
2 t almond flour, or 2 T white flour
1 t xanthan gum
3 T Romano cheese, finely grated
2 cups cheddar cheese, shredded
1/4 cup, heavy cream/milk/half and half
1 T garlic & herb seasoning, (See Amazon link below for what I use)
1 t salt
1 t pepper
1/4 cup bacon or prosciutto (crispy), optional (for the topping)

Directions: Preheat oven 375°. Steam or blanch the cauliflower till fork tender. (Note: do not overcook the cauliflower or it will be mushy.) Once cauliflower is fork tender, drain it and add to a large bowl. In a smaller bowl, add in melted butter, onion, garlic, almond flour, xanthan gum and garlic and herb seasoning. Whisk together.

Add the butter mixture with the cauliflower and mix well, slowly pour in heavy cream. Fold in the Romano cheese and shredded cheddar cheese. Season with salt and pepper. Add to an oven safe casserole dish. Bake for 35-40 minutes or until bubbling and edges are starting to brown. Let sit for 5 minutes before serving. Top with crispy bacon or prosciutto. Enjoy!

Note: If you don’t have garlic and herb seasoning you can substitute with 1 t garlic powder, 2 t parsley, 1 t dill. This recipe can easily be made ahead of time. You can make and refrigerate for a few hours or even over night. Just add an extra 15-20 minutes to the cook time.

Keto Chicken Cutlets

Anyone who wants to reduce the amount of carbs in their daily diet, will loves these chicken cutlets. They are made with pork rind crumbs and they honestly come out so delicious. The cool thing about these chicken cutlets is you can use any flavor pork rinds you have. For example, they have spicy pork rinds and that would give the chicken a nice kick! If you are looking for more of a traditional chicken cutlet, stick with the plan flavor pork rinds. If you are craving a nice delcious chicken cutlet, and want a low carb option, please give this a try!

Keto Chicken Cutlets

Ingredients:
6 thin chicken breast, pounded into thin cutlets
2 cups plain pork rinds, finely chopped (use a food processor) (Or you can get the already crumbed pork rinds)
2 eggs, beaten
1/4 cup Romano or parmesan cheese, finely grated
2 t Italian seasoning
1 t garlic powder
1 t onion powder
1/2 t salt
1/2 t pepper
1/4 cup olive oil
1/2 lemon, optional

Directions: Heat a large sauté pan on high heat. Add in the olive oil and let heat until hot. About 3-4 minutes. Add pork rinds to a medium flat bowl. Whisk in the Italian seasoning, garlic powder & onion powder, cheese and half the salt and pepper. In a second bowl beat 2 eggs. season the chicken cutlets on both sides with the rest of the salt and pepper. Start breading the chicken. First add the chicken into the beaten egg and then into the breading mixture. Completely coat the chicken cutlet with the breading and add to a plate. Complete with all the remaining chicken cutlets.

Once ready to cook, make sure the oil is hot. Add in chicken cutlets to the pan, one by one. Let cook 3-4 minutes on high until golden brown and then turn over and cook another 3-4 minutes until golden. Remove from sauté pan and set aside. If you can’t fit all the chicken in one batch, do in 2 separate batches. Finish with a squeeze of lemon over chicken, if so desired. Enjoy!

Notes: If you can’t find think chicken cutlets just buy regular chicken cutlets and pound them to your desired thickness. Cooking times will vary depending on how thick your chicken breasts are.
