Beef & Cheddar Crostini

I love being able to turn left overs into something delicious. It helps limit waste and it’s fun to create something new! In this case it was left over beef roast and this is so good. Tender beef, with a cream horseradish sauce topped with a cheddar cheese. Delicious. Perfect bite of food. This is perfect for a dinner party. Simple to put together!

Beef & Cheddar Crostini

Ingredients:
1 baguette (about 10 oz) sliced 1/4 inch thick
1/2 cup extra virgin olive oil
2 t pepper
2 t salt
1lb cooked beef sliced, (slice in thin slices for crostini), warmed
1 cup sour cream
3 T fresh horseradish (more of less to taste)
6 oz age cheddar (I use unexpected Cheddar Cheese from Trader Joe’s)

Directions: In a small bowl mix together sour cream and horseradish, cover and put in the refrigerator until ready to use.

Preheat oven to 350°. Arrange slices of bread on a large baking sheet. Brush both sides with olive oil and season with salt and pepper. Bake until golden brown about 15-20 minutes. Once done, let cool.

To assemble the crostini take cooled crostini and top with a dollop of horseradish sauce, top with warmed slice of beef and a piece of cheese, (or a few pieces of cheese depending on size) Serve Immediately.

Note: This recipe is great for a dinner party and can be assembled quickly at the last minute. This the perfect bite with creamy sauce, crisp bread and tender beef. Delicious.
