Reverse Sear Tri-Tip

I am a huge steak eater. I love a nice juicy steak or a beef roast. I made a reverse sear tri-tip and it came out so good it’s my go to way to make the tri-tip.

I do a reverse sear method when cooking a tri-tip. A reverse sear is basically where you cook your meat/roast on a low temperature for longer, then finish it with high heat either on the grill or a cast iron skillet. Finishing with the high heat gives the meat the nice char/sear you are looking for. You can do a reverse sear with a smoker, grill, oven or a skillet.

My way of doing this one was oven to grill. I’m by no means a grill master, which is why I do the first part in the oven. Give it a try. Reverse sear is great way to cook a steak or any beef really, comes out super tender and juicy.

Reverse Sear Tri-Tip

Ingredients:
4-5lb tri-tip, fat trimmed
1/2 T garlic seasoning
1/2 T onion seasoning
1 T steak rub
2 t salt
2 t pepper

Directions: Let the tri-tip come to room temperature. Preheat oven 225°. Mix all seasoning together and season beef with the mixture. Add a baking rack over a cookie sheet lined with foil. (Makes for easy clean up) Place in the oven and bake until the internal temperature is 125°-130°, about 60-70 minutes. Once an instant read thermometer hits that temp, remove from the oven and let sit 15 minutes.

Heat a grill to 450°-500°. Sear 5 minutes on each side. Remove from the grill and let sit 10 minutes before slicing. Then slice against the grain. Cook till it reaches your preferred temperature. (See below for chart)

Tri-Tip Cooking Temps:

Rare: 125°-130°
Medium Rare- 135°-140°
Medium- 140°-150°
Medium Well 150°-150°

Note: You can also heat a cast iron skillet or a heavy frying pan to high high heat to sear the meat. Use any seasoning you like, seasoning liberally. Also, Look at my “Items I Use” on the homepage for the instant read thermometer.

Easy Corn Casserole

I love this corn casserole.  I know there is plenty of recipes out there for this, but I had to share.  I just made again recently and I haven’t made in a while. I forgot how much I liked it.  It definitely isn’t the healthiest thing, but that’s ok. It’s good to treat yourself every so often.

I don’t personally add cheese to mine, I like it as more of a sweeter dish.  If you want to add some cheddar cheese, you can.  Give it a try!

Corn Casserole

Ingredients:

1 box Jiffy Corn muffin Mix
1 15.25 oz can of corn
1 14.75 oz creamed corn
2 eggs, beaten
1 stick butter, melted
1 cup sour cream

Directions: Preheat oven 350.  In a bowl add in the box of Jiffy, cans of corn, eggs 1 cup of sour cream and melted butter.  Mix till fully incorporated.

Spray a 10 inch pie pan with cooking spray.  Add in the corn mixture and bake in the oven for 45-50 minutes.  Let set at least 5 minutes before eating.

Note: This can be made a day in advanced and just bake when ready to make it.  It reheats very well.  I serve on the nights I make tacos or enchiladas, but any day is a good day.

Bacon & Swiss Cheese Dip

I love bacon. I love Swiss cheese! I got this inspiration for this dip because of the bacon and Swiss cheese quiche I make. This came out so cheesy and delicious. It definitely isn’t a healthy dish, but hey you gotta splurge sometimes right?

Bacon & Swiss Cheese Dip

Ingredients:
16 oz cream cheese, softened
1 lb bacon, cooked and sliced
1 small onion, diced
8 oz Swiss cheese, shredded
2 t garlic powder
2 t onion powder
1-2 T heavy cream, optional
cooking spray
Crackers or Chips for serving

Directions: Preheat oven 375°. In medium mixing bowl add in 16 oz of cream cheese and smash with a fork. Add in cooked bacon (Note: cook bacon till crispy as it will soften sightly inside the dip). Mix well, add in onion and Swiss cheese. Mix well till fully incorporated. Next season with garlic and onion powder. This is where you could add the heavy cream if you’d like. This will help thin the dip out slightly.

Spray an oven safe baking dish with cooking spray. Add in dip and bake in the oven 35-40 minutes. Remove from oven let sit a few minutes. Serve with chips or crackers.

Polenta Bites with Pulled Pork & Ricotta

I’m always looking to try new food creations and that’s exactly how this came to be.  Yes, it’s another pulled pork recipe.  Who doesn’t like pulled pork?  This can very easily be made with bbq chicken as well.

While I was in culinary school we made polenta often.  I will tell you right now, I haven’t made it in years.  I cheated in this recipe and actually bought an organic polenta I found in a roll at the store.  When I was shopping and came across it, I just had to buy it and give it a try.  Hey, it is organic.  I’m sure it’s not the greatest since it’s in a roll, duh! However, sometimes you just need to give something a try.  It worked out perfectly for what I was wanting to use it for.

This recipe is pretty simple and would be PERFECT for a small dinner party.  I’m not adding my pulled pork recipe but if you need it, check it out in my previous blogs.  This is simply going to be giving directions on how to crisp up this rolled polenta  and assembling.  The flavors in this recipe are amazing. From the creamy ricotta to the heat from the pulled pork and the jalapeño this is one delicious bite of food.

Polenta Bites with Pulled Pork & Ricotta

Ingredients:
Polenta roll, sliced 1/2 inch slices
4 T butter
1 T Olive Oil
3/4 cup ricotta
2 jalapeños, sliced
1/2 small onion, diced
2 cups cooked pulled pork

Directions:  Heat a medium sauté pan over high heat. Add in half the butter and olive oil and heat 2 minutes.  Add in sliced polenta and cook for 4-5 minutes until golden brown.  Next add in the remainder of the butter and oil and flip the polenta and cook for another 4-5 minutes.  You can cook longer to your preferred the polenta cake crispier.  Remove the polenta cake and place on paper towel.

To Assemble:  Add a spoonful of ricotta over the polenta, then top with a spoonful of pulled pork next add the sliced jalapeño and diced onions.  You can add more bbq sauce to the pork if you like it saucier.  Sever and enjoy immediately.
